Satisfying. We have sampled the enchiladas from Erick's numerous times, from their booths in the Farmer's Market downtown. They are very tasty. My favorite is the spinach chicken enchilada.

Ericks Enchilada’s is a diamond in the rough find! My neighbor told me about the amazing fresh food hot spot. Everything is made in-house, with genuine love and the freshest of ingredients. You can pre-order or walk-in. Cash is best. Everything is FRESH, so I’m okay spending a little more for FRESH, REAL ingredients without all the preservatives. Enchilada’s are frozen so Erik gives you instructions on how to cook. Erik is patient, kind and extremely friendly. Taste: SOOOOOOO GOOD! I ordered a mild enchilada and salsa - perfect heat. Highly recommend!
